Wines and vines have been grown at the Saint Baillon estate since the end of the Gallo-Roman period. Many traces of these days remain, including a Roman military settlement that overlooks the estate and narrow terraces built by Roman slaves to improve the growing of vines and olive trees.
Replanted in the 1970s according to Appellation Contrôlée criteria, the entire vineyard flourishes on south-facing slopes of stony, chalky, and clayed soil. The buildings, mainly from the 16th and 18th centuries, shelter a modern cellar that allows vinification by gravity with full temperature controls. Since 1980 owner Hervé Goudard has applied himself to producing wines of high character on this ancient vineyard.
