Long maceration period (about 21 days) before shredding and pressing. A small part is not pressed but dipped into the vats. Fermentation at 79°F. After malolactic fermentation, the wine is finished and put into recycled oak barrels for up to 18 months before being blended in vats and later bottled (usually three years after the vintage). |
