Château Calissanne
Coteaux d'Aix-en-Provence
A blend of Semillon and Rolle
Straw-yellow color with green tints, a floral nose that offers notes of hazelnuts and honey. A mouth-watering bouquet! Pleasing complexity and ample texture on the palate, with dominant notes of praline and honey. When the palate is aerated, apricots and spices come to the fore. A unique, elegant wine. Serve chilled, 46°-50°F.
A great match for fish (grilled or sauced), white meat, shellfish gratin, or a cheeseboard.
Grapes are harvested when slightly overripe.
After successive stages of sorting, the grapes are pressed at a low temperature; only the first juices are selected for vinification, which takes place in new oak barrels (barriques and demi-muids) on fine lees to impart the exceptional richness that characterises this cuvée. Malolactic fermentation is not performed, in order to retain the wine's freshness and lively style.
