Clairette, Rolle, Ugni Blanc

Golden, limpid, and brilliant color with silver tints. Intense and greedy nose of white flowers (jasmine and honeysuckle); secondarily, more fruity with notes of tangerine peel. On the palate, unctuous and round, with good acidity marked by citrus fruits (kumquat). Delicate baked finish.

Aperitif wine with goat cheese. Also pairs well with fish in shallot sauce and desserts such as almond cake.
Grapes are harvested by machine at night
Process includes skin contact for 3 to 4 hours, pressing, fermentation between 59°F and 63°F, underground tank aging.
Positioned at the junction of two geological areas; soil is a combination of clay and grit, well suited to vine culture and wine production.
