Best served chilled (55°-59°F), this wine pairs well with seafood and bouillabaisse.

Traditional methods. Careful attention is paid to each parcel, with organic fertilizer used throughout the vineyard. Process includes destemming and crushing, followed by must chilling to delay the onset of fermentation and to allow the flavors to develop. Fine lees contact.
The estate features old vines planted in calcareous rock soil. The low-yield parcels lie at the foot of the Loube Mountain in the higher-altitude portion of the property, which receives abundant sunshine in a quasi-continental mesoclimate.
