Grapes are handpicked at the height of their maturity |
|
 |
Grapes are harvested by hand and macerated in a vat for 4 hours. The temperature is strictly controlled and maintained at 57.2°F. The grapes are gently pressed, and the juice then undergoes a natural decantation process for 24 hours to eliminate undesirable plant and mineral matter. Alcoholic fermentation takes place at 68°F. The wine is kept in vats until bottling. |
