Château Saint Pierre
Côtes de Provence
Lovely deep garnet color. Powerful and expressive nose with aromas of vanilla, coconut, and exotic wood, evolving rapidly towards truffle, then roasted aromas and cocoa, and finishing with licorice notes. Lively attack, full bodied on the palate with well-matured tannins. Long and powerful finish. Flavors are reminiscent of the aromas. A wine with good development potential and suitable for aging.
This high-profile wine is ideal for strong-flavored dishes with truffle and a variety of ripe cheeses.
Grapes are handpicked at the height of their maturity
The grapes, which are from the chateau’s oldest varieties, are picked and sorted by hand. Only the ripest grapes are placed in a vat to be macerated for 48 hours. Fermentation takes place under controlled temperature. The grapes are kept in the vat at a high temperature for up to 1 month in order to extract a maximum of matter. The optimum moment for pressing is determined though daily tasting. Only wine from the initial pressing is used. It is kept in oak barrels for about 2 years before being bottled; then the bottles are placed in the château’s cellar and kept for several months before being marketed.
