The grapes are harvested from late August to late September and the fermentation is done by grape variety. This wine comes from a selection of our best plots.
Vinification by gravity after direct pressing using a pneumatic system; nitrogen is used to avoid oxidation. Vinification and aging in oak barrels for 12 months.
