Château de Saint Martin – Cru Classé
Côtes de Provence - Cru Classé
Grenache, Tibouren, Syrah, Cinsault, Carignan
Eye: Bright peach-lychee color. Bright and clear.
Nose: Intense nose of dried flowers (forget-me-not, rose, and cherry blossom); secondarily, more fruity with notes of white peach.
Palate: A delicate and silky wine with aromas of peach and pomegranate. Long and deep finish of orchard fruits.
White meats, salmon with pink peppercorns, prawns with pastis, duck breast with cherry compote.
Grapes are harvested by machine at night
Process includes skin contact for 6 hours, then pressing, fermentation at between 59°F and 63°F, and aging in an underground cellar, carved from rock.
Positioned at the junction of two geological areas; soil is a combination of clay and grit, well suited to vine culture and wine production
