Domaine Saint Hilaire is a privately owned family estate that has cultivated vines since the beginning of the 18th century. The estate is situated in the heart of the famed Provence area, between Aix-en-Provence and the small town of Salon-en-Provence. The vineyards are located within the Coteaux d’Aix-en-Provence appellation (AOC).
All of the domaine’s vineyards enjoy a southerly aspect, allowing the grapes to benefit from the area’s exceptional levels of sunlight. This sunshine, combined with the famous mistral wind that blows down from the Alps and funnels through the Rhône Valley, contributes to the ideal soil and microclimate conditions of the vineyards.
The estate has 143 acres under vine and produces approximately 350,000 bottles of wine a year. Nine traditional grape varieties are grown: Grenache, Syrah, Cabernet Sauvignon, Mourvèdre, Carignan, Cinsault, Rolle, Clairette, and Counoise.
Harvesting dates vary slightly each year but normally fall in early to mid September. Eighty percent of the grapes are machine harvested with advanced equipment. The whole process, from vine to bottle, is carried out by a dedicated team of 12 persons.
The domaine’s well-equipped cellar uses the very latest technology. Each stainless steel tank is individually temperature controlled, and modern pneumatic presses and an automated bottling line are used. Small French oak “barriques” are used for maturation of certain wines. Currently, 90% of production is dedicated to the French market, while the remaining 10% is exported to customers in Germany, Denmark, the Netherlands, the United Kingdom, and Brazil. The domaine is seeking a U.S. importer. |
