Domaine de Sauvecanne is owned by Philippe Caillol, age 37, who represents a new generation of vine growers. Because the estate is only 17 acres in total, he tends the vines and vinifies the wine himself. Mr. Caillol embraces small, non-industrial farming, where the winemaker is a craftsman completely involved and in charge of his creation. He says, “This job of vine grower, I chose it by love. From this love is born respect of ground, of vine, grapes, and wine.” As a result, he embraces organic farming, hand-harvesting of grapes, and traditional winemaking methods (soft pressing and temperature control). Mr. Caillol’s mission is “To seek the best, not productivity. To cultivate a small area and care for it well. … To embrace simplicity, common sense, and responsibility.” |
